Tomato Basil Crostini



Tomato Basil Crostini
Ingredients
  • 32 slices of (1/4 inch) baguette
  • LunaOlivo Avalon virgin olive oil
  • salt, to taste
  • 1 head of garlic, roasted (optional)
  • 3 tomatoes, chopped
  • 6 basil leaves, thinly sliced
  • 2 tbsp of shredded parmesan cheese
Preparation:
  1. Preheat the oven to 400° F.
  2. Cut the baguette into 1/3 inch slices and place on a baking sheet. Drizzle the bread with extra virgin olive oil and season with salt. For extra flavor, rub the slices with roasted garlic.
  3. Toast for about 15 minutes or until golden in the oven.
  4. Layer each piece of toast with tomato, basil and shredded parmesan cheese and drizzle with more extra virgin olive oil. Serve immediately.
