Ingredients
- 32 slices of (1/4 inch) baguette
- LunaOlivo Avalon virgin olive oil
- salt, to taste
- 1 head of garlic, roasted (optional)
- 3 tomatoes, chopped
- 6 basil leaves, thinly sliced
- 2 tbsp of shredded parmesan cheese
Preparation:
- Preheat the oven to 400° F.
- Cut the baguette into 1/3 inch slices and place on a baking sheet. Drizzle the bread with extra virgin olive oil and season with salt. For extra flavor, rub the slices with roasted garlic.
- Toast for about 15 minutes or until golden in the oven.
- Layer each piece of toast with tomato, basil and shredded parmesan cheese and drizzle with more extra virgin olive oil. Serve immediately.
