Potatos with Shallot Relish

You could call this posh comfort food or fancy potatoes, either way it’s deeply satisfying and very very delicious. It can be made in advance and then quickly re-heated in the oven, just to have the cheese melting, cuz there’s nothing better then melting cheese, right?

Difficulty: easy
Prep time: 30 minutes
Cook time: 1 hour
Serves: 2
1 potato
LunaOlivo Garlic olive oil
salt and freshly grounded pepper
4-6 sun dried tomatoes
80 g Gorgonzola cheese
Balsamic shallot relish
Process: Prepare the balsamic shallot relish according to the instructions here.
Heat the oven to 180°C.
Wash the potato under running water (do not peel) and cook for 3 minutes in boiling water. Then make incisions to the potato  (like preparing hasselback potato, so it would still hold together) about 5mm thick. Sprinkle with salt, pepper and drizzle with olive oil and bake for 45 minutes-1 hour in the oven.
Once done, slice till the end and layer with gorgonzola and sun dried tomatoes. Top with balsamic shallot relish and serve.
Tip: for a less fussy way, you can stuff the hasselback potato with sun dried tomatoes and gorgonzola and serve with shallot relish.
