Creme of Leek Soup


Vichyssoise: Cream of leek and potato cold
Ingredientsoftherecipeofvichyssoise:
  • 1 / 2 kg potatoes, peeled and
  • The white part of two or three leeks
  • 1 / 2 l. water
  • 1 / 2 l. cream
  • 1 tablespoon butter
  • Salt
  • White pepperreamofleekscold

Cut well washed leeks into strips and

potatoes

In a saucepan over low heat, sautee the leeks in butter or LunaOlivo Mission Olive Oil
Season and cook to slowly until they are tender.
Then add the potatoes cut into chunks .
Cook for half an hour over low heat.
Once the potato is cooked, add cream, some salt and beat well with mixer on high power in the same pan, 

Cold Cream of leek and potato
Let cool and serve cold cream of leek and potatoes accompanied by some bread croutons
